Sorry....MBA student...can't you tell? Anyways...sometimes I kick ass and have great healthy weeks and other times I suck. I have been sucking lately. Esp the past 2 weeks. I am happy to say I am back on track...
Unfrotunatly for me I have an addictive personality. I know I have mentioned this before in my posts. It's so true tho. I can't stop playing xbox or lame farmville even when I try. I just can't. So what happens is I become sooo addicted with working out and eating healthy that it consumes my life for a week or so. Then something will happen and I will skip a workout and then just lose the addiction for awhile. This is bad. Hence the past 2 crappy weeks I have had. It doesn't help that the weather sucked too. That just makes it worse. I need to eventually join a gym because when the weather is terrible it is hard for me to get in a good workout. I am usually one extreme or the other and I need to find my happy medium.
So...back to me being on track. I have been eating really well lately and have been exercising hard when I can. Cooking has always been fun for me and I love trying new things. However, sometimes it is a great idea to revisit old recipes that you maybe forgot about. That is what I did this week. I made bruschetta chicken which is just grilled chicken with fresh homemade bruschetta on top. It was amazing. I love it.
The Bruschetta is SO easy to make!! Here is what you need:
(1) TBS of good Olive Oil
(1) TBS of Balsamic Vinegar
Clove of Garlic
A little bit of red onion
Mix all of those together and let marinate while you chop the rest.
Tomatoes. I used heirloom tomatoes from Trader Joes because they looked AWESOME and I had to buy them. I have also used plum tomatoes and tomatoes on the vine. Both are good.
Add salt and pepper to taste.
And you're done and addicted.

People eat with their eyes first so it's always a good idea to add color to your food and make it LOOK yummy. I will def be serving this at my Halloween themed "Family Dinner" in a few weeks. Serve it with a fresh baguette as an app or put it on top of protein for a main dish. Grilled chicken or steak works the best. SO good and SO healthy. The whole thing is only 3pts for this huge bowl! The points are for the tablespoon of olive oil. How awesome is that. I LOVE this recipe and I will def cook it over and over again!
I made my little trek to Trader Joes this weekend. Since it is about 25mins from me I make sure to stock up whenever I go. I got the usual...orange chicken (surprisingly good stats), fish and naan. I also picked up some awesome fiber rich cereal. I was inspired by a fit blogger I "met" on twitter who puts this high fiber cereal pellets in her cereal every morning. She has lost over 70lbs so I think we can trust her judgment!!!

LIKE LOVE IT!! My rings are falling off and so are my yoga pants when I run. Not sure if that is because its cold and my fingers shrank and the yoga pants are old so maybe they are just getting stretched out...either way I take it as a good sign!! It's really exciting that my size 18 jeans still fit even when washed AND dried!!! :)
You may think I am weird...but I have also noticed bones popping up. No...not male bones popping up...bones on MY body!!! Like those bones near your neck and chest that pop out and also....this bone!!!Do you see that bone??? It's new!! It just recently popped out of 10 layers of fat! I am happy to see it. :) I have also noticed dimples to appear. It is hard to see in this pic but they are there!
