Sunday Meal Prep!

How many times have you heard the phrase "Fail to Plan, Plan to Fail."  Probably a million times.  Unfortunately if you're like me, every time someone tells you a tip or trick you ignore them and act like you know what you're doing and don't need any help from anyone/anything. Ha, sad but true...the life of being a stubborn brat.

Well that little saying is 100% true. I'm not too proud to admit that is the best advice I have seen along this journey. I think it is SO important to food prep and prepare for the week so that you can make good choices. I am a huge advocate of food prepping for the week so that when I get home from the gym or work, I already have food prepared and ready for me.  This helps me out so much because the time I get home and showered it's already 8pm and who the hell wants to cook at 8pm? NOT I.

I usually prep the same old crap every week and I have just been tired of everything.  My mom showed me this recipe last weekend and I thought it looked SO good. I had to try it.'s not clean and it's not 100% healthy...but we can work with this.  I put my own little touch on it and made it my own so this recipe isn't really an official recipe, but it worked.

Here you go:

(1) 1lb bag of frozen tortellini
(1) Can of Italian style diced tomatoes
(1) Can of fat free low sodium chicken stock
(1) Bag of fresh spinach
(1) Package of 1/3 less fat cream cheese broken up in sections
Sliced portabello mushrooms
Sun dried tomatoes
Roasted chicken

Throw it all in a crock pot, stir it up and let it cook on low for a few hours.

I doctored up the recipe and added the chicken, mushrooms and sun dried tomatoes.  I also added less liquid, the real recipe called for 2 cans of tomatoes and more stock. I made it according to what I like and you can pretty much add anything to it!  It was so good!  I want to make this again and again but with different veggies. I also want to play around with the recipe to make it healthier. I was thinking of subbing the tortellini for zucchini pasta or veggie pasta. Just cook everything in the crock pot and then pour it over zucchini noodles...that sounds great!  I know the cream cheese isn't very healthy but fat free cream cheese makes me want to gag, but I'm sure it can be used.

I don't have a picture of the final product but maybe I can take one tonight and post it.  Ugh so good.  If anyone tries it, let me know. Or if you want the "real" recipe, also let me know and I can get it for you.

Ummmm P.S. - Saturday I have a 5k.  I haven't been to the gym in over a week and I haven't ran since my last 5k.  Can we all assume that this weekend's race will be a trainwreck?  It will still be fun...but damn it is going to be ugly.


  1. You're right about meal planning, but it's something I suck at. The recipe looks good and so versatile.

    1. It was really good! Although, I have to be honest, after eating it 2 nights in a row I did NOT want to eat it again. So maybe not the BEST recipe to prep for the week...maybe just a small serving for one time? :)
